Plants that store water in their stems — succulents, cacti, snake plants — tend to rot in water before they root, so those are better propagated by soil or by other dry methods. Ferns and air plants don't propagate by stem cuttings at all. If you're unsure whether your plant is a good candidate, look for soft, non-succulent stems with visible nodes (the small bumps or joints where leaves attach).
